Call and text history recovery? How do I view the last 3 mon

Good evening, It appears that in order to get a copy of my history for the past three months I will be required to submit a request. Can you please send me the information I will need to follow in order to review history. I also have one question about the history will all calls and texts be listed and if anything was deleted from the phone will it still show up in the history report? Please let me know thanks
