Getting Text & Data to work on iPhone

I'm finding it very difficult to get change the APN on an iPhone so that texting and data can be used on the ST sim card that I purchased. Phone calls work great and that only required inputting the ST sim card and porting the old number to ST. I've researched a lot of different ways of how to change the APN on an iPhone, but the iPhone 3 that I'm working with does not seem to have a simple way to do this. I've downloaded the iPhone Configuration Utility and think I have it set up correct, but texting and data still do not work. I'm notice other people are having the same problem, but I don't see any solutions. Any help would be appreciated.
